]]>For coffee lovers who like to try new drinks and coffee recipes, we have one that matches the season: Lavender Latte.
This drink has a refreshing and very delicate flavor and aroma. It’s delightful and I would say it is also soothing with the lavender aroma.
You can enjoy hot or cold, catching up with friends during Easter brunch or reading a good book.
Some interesting facts about lavender are that it has a good potion of vitamin A, good for your eyes and to keep skin healthy. Its calming and soothing effects have been appreciated for many years and because of that, it is used in many holistic therapies and supplements.
Now you can incorporate this flower in your coffee and enjoy a cup full of benefits!
Ingredients for the Syrup:
¼ cup dried lavender
2 tablespoons of white sugar
½ cup of water
Lavender Syrup Procedure:
In a small saucepan combine the lavender and water, and bring it to a boil. Once boiling, reduce the heat to a simmer. Allow the mixture to simmer for 5 minutes before removing from heat. Let the mixture stand until it cools to room temperature.
Once the lavender and water have cooled, use the strainer to separate the leftover lavender buds from the water. It is important that you allow it to cool prior to straining so the mixture can steep.
Return the lavender water to a saucepan, add the sugar and bring to a boil then reduce heat to a simmer. You will want to whisk periodically. Simmer for 4 minutes, or until you have a thicker consistency from the dissolved sugar.
Lavender Latte Ingredients:
2 tablespoons, or 1 ounce of the lavender syrup
2 shots of espresso (2 ounces) using Tico Coffee Roasters Primavera Blend
10 ounces of milk of your choice
If you don’t have an espresso machine, brew 2 tablespoons of coffee with 4.5 ounces of water
Using an espresso machine, extract 2 ounces of coffee into a cup. Then, add 1-2 ounces of the lavender syrup, depending of how strong you want it. Steam the milk so it gets thicker and more silky, but not super foamy. It’s a latte!
To enjoy it cold, pour ice into a tall glass, just add the espresso or strong coffee, the syrup, and top with your milk of choice.
Garnish with some lavender buds and enjoy!!
]]>The equipment is quite inexpensive compared to espresso machine. Here is what you need to brew pour over at home:

To get started with the pour over method, I recommend to use as a standard recipe - 24 grams of coffee with 375 grams of filtered water first to get a first impression of your coffee. Do a few trials and modify one parameter at a time till you find the recipe that works with the coffee you are using.
If the coffee tastes watery or weak, add more coffee without changing other factors and evaluate whether it tastes better. If you find your cup too intense, consider reducing the amount of coffee. But remember to keep track of what you’re changing so you can replicate your perfect brew when you find it.
When you start pouring water, the coffee grounds will start creating bubbles and raise; this is called blooming. This happens when fresh roasted coffee degases and releases carbon dioxide. The general rule here is to double the amount of water for the amount of coffee you use. For example, if you use 24 gr of coffee then add 48 gr of water to start the extraction and the blooming.
Wait then for 30-45 seconds and then start pouring the additional water in a circular consistent motion and at a height that will create agitation or movement in all coffee grounds, till you have reached the desired amount for your brewing ratio.
Don’t get scared with this long description! Pour over coffee is very easy to make and master. After a couple of times brewing with this method, you will get all the necessary skills to prepare a delicious cup of coffee - in a very easy way!

This coffee from Finca Santa Lucia is grown and processed by Don Ricardo Perez and his daughter Mariana. Our long-lasting partnership allowed us to collaborate to work on this exclusive lot ONLY found at Tico Coffee Roasters.
Something crucial and the beginning of quality are the farm practices. Ricardo and Mariana have the heritage and knowledge of generations growing superb coffees in the West Valley region of Costa Rica. The meticulous harvesting and processing procedures make this coffee the result of dedication.
They are deeply committed to preserving the environment and growing organic coffees and, at the same time, keeping part of their farm untouched to allow the native species to thrive.
Unlike aerobic fermentation (the normal process for washed coffees), where beans are processed entirely outside; anaerobic fermentation processing is where coffee is fermented in an artificially created environment where air/oxygen is not present, typically using large airtight tanks (usually stainless steel).
How is it done? The coffee cherries are milled to remove the skin and some of the mucilage (similar to honey processing), then placed inside sealed tanks where, over the course of up to several days, the mucilage of the cherry is broken down through organic fermentation. The cherries begin to release CO2 and heat as pressure builds inside the tanks — some of which is allowed to release through one-way valves. Water is added when necessary to keep fermentation from overheating. This is very similar to beer and wine-making.
In this oxygen-deprived environment, only certain non-oxygen reliant microorganisms can get to work, turning the natural sugars into acids and ethyl alcohol — imparting a deep and unique flavor profile on the beans. After fermentation is complete, the beans spend several weeks carefully drying.
Mariana Perez took the lead to oversee this project and the result is outstanding! We couldn’t be happier to shine the light on her and to reiterate our commitment to women's empowerment in the coffee lands.
This micro-lot has notes of Apricot, black cherry, dried fig, prune, wine, and a lingering sweetness that creates the perfect aftertaste.

Coffee cascara is relatively new in the United States, but it has been used to prepare a beverages for a long time in some other parts of the world.
In Bolivia it is called Sultana, and in Yemen, it is known as Qishr, and it is known to be regularly consumed. In Ethiopia, the cascara beverage is known as Hashara. The people in these countries add different spices to make it more fragrant.
As the name suggests, cascara tea refers to tea made from the fruit shells of coffee cherries. It is being made using the husks left behind after the removal of the coffee beans. After that, they are dried, which is resulting in a product similar to tea. Subsequently they are packaged and used to make a highly beneficial herbal tea.
In the past, once the coffee beans were separated from the fruit, the common practice was to discard the fruit and compost it.
Today, cascara is popular amongst not only the coffee lovers but also tea drinkers and consumers of healthy products, because the coffee cherry fruit contains a high amount of polyphenols. They can help managing blood pressure levels and keep your blood vessels healthy and flexible, promoting good circulation. As an additional benefit they also help reduce chronic inflammation, another risk factor for heart disease. Polyphenols can also reduce and help control your blood sugar levels.

Creating coffee blends is like creating a recipe where we combine two or more coffees to strike overall balance, while at the same time producing complexity of flavors.
We blend to create a perfect taste for a specific consumer segment, a type of brewing method (espresso, drip, aero press, french press) or a specific season (summer vs winter time).
The art of blending requires us to put a lot of attention to detail and to consider the coffee varietal, the density of the coffee beans, the country of origin, the processing method (washed, honey, natural, monsooned), the blending ratios, the roasting temperature, etc.
The first step in this process is to figure out the desired taste or the goal for the blend. This will determine the coffees we will be using and the estimated proportions.
Then, we do a sample roast of each individual coffee and cup it to evaluate the body, the aroma, the flavor, the acidity and the sweetness. It’s kind of like doing an X-ray! Different coffees have different tasting notes and performances in the cup.
Once we figure the potential of each coffee, is time to start the blending process. Imagine creating a recipe from scratch; it takes time and many trials.
We then also try the new recipes in the different brewing methods to evaluate their performance and how they are tasting on their own or combined with other ingredients like different types of milk.
Once we have found the perfect blend we bring it to you to enjoy and savor that new creation.

The area plays an important socio-environmental role in the region as it serves as home for hundreds of rural families, also it forms an ecological corridor with several conservation units in its surroundings with a rich biodiversity, diverse plant formations and species of ecological and social importance. Through actions that encourage the responsible exploration of natural resources, the project promotes the conservation of natural resources, coupled with socioeconomic development focusing on sustainable business chains to improve the well-being of communities as a result of project activities.
