Nicaragua Dipilito is a meticulously crafted coffee born from five family farms in the Dipilto municipality, brought to life through an innovative partnership with Cafetos de Segovia—a transparency-driven export company founded by sisters Ana and Martha Albir Sotomayor.
Each cherry is hand-picked at peak ripeness, carefully sorted, and processed with precision at the farm level. The wet parchment then travels to Cafetos de Segovia's state-of-the-art drying facility, where it's slowly dried using shade cloth patios and raised beds with strict temperature controls.
This thoughtful approach preserves the unique character of each farmer's work while removing the burden of expensive drying infrastructure from small producers.
